BBQ Chicken Dinner…RV Living

351 miles today… so a good meal was important! This meal is simple and easy and made in our RV microwave/convection oven. When stocking our small freezer for our road trip, we prepackage bone in, skin on chicken thighs, 2 per freezer bag, and pop them in the freezer. I never worry about having more than two packages on hand there’s always places along the way to shop. Sweet potatoes are an easy and delicious side and only takes 4-5 minutes in the microwave on high to cook. I love mine with some horseradish and a dollop of sour cream on top! To round out the meal, I combine a small jar of marinated olives, mushrooms and sweet cherry peppers with a pint of cherry tomatoes. I keep any leftovers in the refrigerator for another meal. When the chicken coms out of the oven, I put the sweet potatoes in to cook. It’s easy, quick and so good. Let me know what you think and post a picture if you make it!
While on the road, our go to BBQ Sauce is Trader Joe’s Kansas City Style, we found it to have just the right flavor and is versatile for beef, pork and chicken.
BBQ Chicken
Ingredients
- 2 ea Chicken Thighs Bone in, skin on
- 1 tsp paprika
- 1 tsp minced onions
- 1 tsp brown sugar
- 1 tsp minced garlic
- 1 dash salt & pepper
- 1 Tbs olive oil
Instructions
- In a small bowl, combine the paprika, minced onion, brown sugar, minced garlic and salt and pepper.

- Rinse and pat dry the chicken thighs, dredge each in the spices and place in a baking dish, drizzle with olive oil and cover with aluminum foil. Bake in Convection Oven @ 375 F for 25 minutes. Remove from oven, slather with BBQ sauce and return to oven @ 400 F for approximately 10 more minutes to finish cooking.

- Remove from oven and temp. Chicken is done when a meat thermometer placed in thickest part reaches 165 degrees F. Let meat rest in its own juices about 10 minutes before serving.
