Banana Bread
When we buy bananas at the market, it always seem that one or two get ripe before they’re eaten! However, that’s not a bad thing, they get put in a freezer bag and tucked away in the freezer for a week or two until we have a quiet day to make banana bread. Ok, I have to admit it’s always my husband, the early riser, who loves to bake and I more than enjoy waking up to fresh banana bread for breakfast! Here is his recipe.
Ingredients
- 1/2 Cup Butter
- 1 Cup Granulated sugar
- 2 Each Eggs Beaten
- 3-4 Each Bananas Crushed
- 1 1/2 Cups All purpose flour
- 1/2 tsp Salt
- 1 tsp Baking Soda
- 1 tsp Vanilla
Instructions
- Preheat oven 350 degrees FGrease and flour a Loaf Pan*In a medium bowl,cream together: butter & sugar. Add eggs,bananas and vanilla. Mix well *In a large bowl,sift together: flour, salt,and baking soda.*Add the wet mixture to the dry mixture and stir gently to combine. Do not overmix. *Pour into prepared loaf pan and bake approximately 55 minutes or until a toothpick inserted in the middle comes out dry.He always doubles the recipe!!!
